1001 Low-Fat Vegetarian Recipes Cookbook
Lately we've been using the 1001 Low-Fat Vegetarian Recipes Cookbook... not because we're vegetarian, because we're not. But my wife went on a diet (right before Christmas!) and she pulled this out because it gives you all the calorie, fat, sodium, protein, etc. info she needs for her online food diary.
The other cool thing about it is if you use an exchange program, it also gives you the exchanges in all the relevant categories.
And with 1001 recipes, there's lots to choose from! And there's everything - from appetizers through desserts!
