Casseroles... yumm. Growing up in the 60s (yes, I'm THAT old), we ate casseroles all the time. I don't know if that was just my mom's specialty or if it was a sign of the times. All I know is I learned to love casserole recipes of all types. I mean, how can you beat all of the ingredients of a well-balanced healthy meal all being in one pot? Talk about easy...

I can tell you that cooking casserole style is pretty economical too, because the meat goes a long way when it's mixed with rice or noodles and vegetables. You really just need enough meat to give the dish flavor...

I have quite a few casserole recipes for quick meals at my disposal and I'll add them here as fast as I can. Most can be considered quick easy meals to prepare, though they might take up to an hour to cook through.
