Chicken Pesto with Spinach Fettucini

If you like chicken and pesto, then this easy pasta recipe is for you. This recipe uses all previously prepared or store bought foods, so it goes together fast & easy. With cooked chicken on hand, thrown together meals like this are truly super easy!

In the summer I make a big batch of pesto sauce, freeze it in ice cube trays, wrap the chunks individually and keep them in the freezer.

Ingredients:

  • Cooked chicken breast cut in chunks
  • Your favorite pasta
  • Pesto Sauce - store bought (in a jar) or home made
  • Grated cheese - Parmesan or other
Directions:

Cook the pasta, drain, add chicken and pesto to the same pot. Add the pasta, toss until evenly coated, heating gently and serve with grated cheese on top.

Bonus Recipe: Pesto Sauce
Here's my homemade pesto recipe.

Ingredients
  • 5 cups tightly packed fresh basil, coarsely chopped
  • 3/4 cup olive oil
  • 1 tsp salt
  • 3 Tbsp lemon juice
  • 2 to 3 cloves garlic coarsely chopped
  • 1/2 cup pine nuts or chopped almonds (optional)


Directions:

Put all ingredients in a food processor and process until smooth.

This sounds so good, Sue-Ann... and fast and easy to boot. I just can't wait to try it. I haven't made pesto before, but I love basil, so I'm anxious to try your recipe...
