Editor's Note: I love a good burrito. But I usually buy them, rather than make them. However, after seeing Holly's burrito recipe, I'm ready to try making my own.
Ingredients:
4 tortillas
1 cup refried beans
4 to 8 T. shredded cabbage
1 cup cheese
Salsa
Sour cream
Directions:
Line a square baking dish with aluminum foil, leaving enough foil on two sides to cover the pan after you put the burritos in.
Then, lay a tortilla flat and spread approximately 1/4 cup refried beans down the center of it.
Next, top each tortilla/beans with 1 to 2 T. chopped or shredded cabbage, 1/4 cup cheese, and 1 T. salsa.
Roll each tortilla up, folding the ends in as you go and lay seam-side down in the baking dish.
Fold the foil up over the top and bake at 350 degrees for about 30 minutes until hot. Serve topped with a dollop of sour cream if you wish.
