Goulash is a casserole recipe I grew up on, at least my mom's version of goulash. Here basic recipe was macaroni, ground meat and tomatoes. I often make an Italian goulash with ground turkey, but tonight I wanted to use up some frozen macaroni and ground beef I had on hand. And... I'm not going to lie... I am addicted to vegetables these days. So everything I make HAS to have lots of veggies in it. So... my thrown together meal tonight was a vegetable-stuffed & easy goulash recipe! Hope you enjoy...

Vegetable & Hamburger Goulash Recipe

Ingredients:

1 pound lean ground beef
Olive oil
2 cups elbow macaroni, cooked
1 can diced tomatoes
1/2 red onion
1/4 red bell pepper
2 cloves garlic, minced

1 small zucchini, quartered & sliced
1/4 cup red wine
1/2 cup beef broth
1 handful of fresh mushrooms, chopped
Seasonings, as desired
1/2 cup shredded cheese
1/4 cup bread crumbs/1 T. melted butter

Directions:

Brown the ground beef in a little olive oil. Season it with salt, pepper, and some herbs. I used oregano and basil. When it is no longer pink, add the red wine to the pan and cook until it is reduced. In a large bowl, mix the cooked ground beef, the macaroni, and the can of tomatoes. Rinse the tomato can with a bit of water and add that to the bowl too.

In the same pan, add the onions with a little salt and cook for a minute or two. Then add all of the chopped vegetables. Cook and stir for a few minutes until slightly softened. Season as desired. When done, add to the bowl.

Mix in half of the cheese (I used grated Monterey Jack). Also, add the beef broth. Stir to mix well; adjust seasonings as needed. Turn the casserole into a 2-quart casserole. Top with a mix of the remaining cheese, bread crumbs, melted butter and a little black pepper, oregano and basil. Bake at 400° for about 30 minutes until top is browned and casserole is bubbly.

This would be great served with a green salad and some crusty French bread, if you're more prepared and have a better stocked kitchen than I did. At any rate, I got rave reviews about how delicious this was from my family. Hopefully, my readers will agree and enjoy this easy goulash recipe as much as we all did!


Variations

  • Swap ground turkey or veggie crumbles for the beef, or make it vegetarian
  • Add some smoked paprika for some Hungarian flair (goulash is originally a Hungarian meal)
  • Use grated mozzarella in the casserole & grated Parmesan on top
  • Use different veggies, such as carrots, green peppers, eggplant and/or broccoli
  • Substitute a different kind of pasta for the elbow macaroni, such as penne or shells
  • Use different seasonings... whatever you like best... and garnish with fresh basil
