Full disclosure... this recipe is strongly based on one I found in the Rachael Ray 365 cookbook, but I make it slightly different each time, based on what I have on hand. So, kudos to Rachael, but this is my slightly altered version.

Mexican Eggs & Potatoes

Ingredients:

2 T. oil
1/2 lb. bulk pork sausage
1 medium sweet potato
1 large red onion, chopped
1 red pepper, chopped
1/2 cup salsa
1/2 cup sliced mushrooms

2 tsp. chili powder
1 tsp. cumin
2 tsp. coriander
Salt & pepper to taste
1 cup grated taco blend cheese
1/2 cup parsley
4 large eggs

Directions:

Heat the olive oil in a large pan. Add the sausage and cook till browned (about 3 minutes), breaking it up as it goes. Next, add the potatoes, onion, mushrooms and red pepper. Season with the cumin, coriander,chili powder, salt and pepper. Stir and cook till potatoes are done, about 10 minutes.

When the vegetables are cooked, mix in the parsley and then transfer to a platter or individual plates. Sprinkle with the cheese and then cover with foil; the cheese melts under the foil.

Next, fry up the eggs in a small amount of water, then place on top of the potato mixture. Top with a spoonful of salsa and serve.

We love this meal. It's got stick to the ribs goodness and is so easy to make. One note: Be sure to use sweet potatoes, rather than yams. Sweet potatoes have light brown skin and a yellowish, but not orange, meat.


Variations

  • Scramble the eggs instead of frying them
  • Use green, yellow, and/or orange peppers rather than red ones
  • Omit the sausage for a vegetarian entree
  • Substitute another type of breakfast meat
  • Use white potatoes instead of sweet
