For decades, eggs got a bad rep as being unhealthy. Recent research, however, suggests that eggs are not nearly as bad for us as originally thought. In fact, they can be downright good for us!
And quick meals are super simple with eggs. I love eggs, and though I still wouldn't recommend you eat them every day, mixing egg recipes in as one of your meal choices each week is economical, healthy, and fast to put on the table. And there are just so many ways you can go with eggs in your recipes. You can just stick with "breakfast for dinner" meals, or you can prepare recipes that use eggs as in ingredient, but aren't really a traditional breakfast recipe per se.
