Fast and Easy Hamburger Soup

by Carol M. Edwards
(Ticonderoga, NY)

This hamburger soup recipe cooks up in about 30 minutes. So fast, easy and good. I love to make this on cold winter days.

Ingredients:

  • 1 1/2 lbs of lean hamburger
  • Large can of crushed tomatoes
  • 2 cans of corn
  • 2 cans of peas
  • Can of sliced carrots
  • Clove of garlic
  • Salt

Directions:
Note: Do not drain the vegetables. You can substitute fresh veggies for the canned, just cook until they are tender. Also, you can add noodles if you like.

In a 5 qt. dutch oven, fry the hamburger and the garlic. Drain the grease. Return the pan to the stove. Add the crushed tomatoes and the vegetables, including the juice. Add water to bring the soup level to near the top of the pan. Add salt to taste. Cover and bring to a boil then simmer until the veggies are done.

Serve with garlic bread or hot buttered rolls.

Definitely Fast and Easy NEW

This does sound fast and easy, Carol, and thanks for submitting it. Reminds me of Stan's easy canned vegetable soup, except you've added hamburger. Great recipe for someone who doesn't feel like spending a lot of time on prep.
