Easy Tilapia Recipe With Sauteed Vegetables

Ginger Lime Tilapia is another throw together meal that can be whipped up in under an hour. And easy tilapia recipe with sauteed vegetables on top.

Here's another recipe for a throw together meal that I developed one Tuesday night. Dancing With the Stars was about to start and I needed something that I could cook up fast, with not too much prep time. After all, I wanted to watch the dancing! I had a couple of bags of frozen tilapia in the freezer, so I pulled them out, set them to thawing... and started going through the fridge to see what else I could add to my recipe...

The result was this meal, which once again, was a big hit with my husband. I found it to be quite flavorful and we will definitely be having this one again.

Ginger Lime Tilapia

Ingredients:

1 to 2 tilapia filets per person
1 lime
1 T. grated fresh ginger
1 large clove garlic, minced
1 stalk celery, minced
1/2 red pepper, thinly sliced
1 T. butter

1/4 cup grated carrot
4 or 5 sliced mushrooms
Olive oil
Salt/pepper to taste
1/4 cup white wine
1 T. each chopped fresh cilantro & basil

Directions:

While your fish is thawing in cold water (if necessary), cut up your vegetables and then start sauteeing the mushrooms, celery and red pepper in 1 or 2 T. olive oil in a large frying pan. Season with a sprinkle of salt. When they start to soften and brown, add the garlic and carrot and saute for another minute or two.

Push the veggies to the edges of the pan and add a bit more oil to the center. Then, add the pieces of fish, and start sauteeing them. Meanwhile, grate the ginger and some lime zest into the pan over both the fish and the veggies. Turn the fillets over when they start to brown, and add about 1/4 cup lime juice to the pan, along with the white wine.

When the fish is cooked, remove it to a plate and keep warm. Meanwhile, cook and stir the vegetable sauce until the liquid is reduced. If it cooks down too quickly, you might add a little water. When it's done, stir in the butter to thicken the sauce slightly. Fold in the cilantro and basil and serve. (Veggie sauce is spooned over the fish.

I served this fish with mashed potatoes and steamed asparagus that was tossed with salt, pepper and a little lime juice, to mimic the seasonings on the fish. It would have been good with rice or couscous too.


Variations

  • Use whatever veggies you have on hand, such as zucchini, broccoli or cauliflower, shredded or chopped small
  • You can substitute dried herbs for the ginger, cilantro and basil, though the flavors won't be as intense... or fresh
  • Add in a little minced onion
  • Substitute your favorite kind of fish, or even shrimp, instead of tilapia
