My non-authentic Greek salad recipe and complementary Greek salad dressing recipe is scrumptious... even if I can't make any claim whatsoever to Greek heritage!

I like everything that goes into a Greek salad, especially the feta cheese. But when I wanted to make one a few months ago, I didn't really have a recipe. So I just kind of winged it, like I do most of the time these days. I did grab an absolutely fabulous Greek salad dressing recipe off of my go-to recipe site, AllRecipes.com, but as usual, I customized it a bit.
My Greek salad recipe tends to change a bit each time I make it, but this is the basic idea...
Ingredients:
1/2 bag romaine lettuce, torn into bite-size
1 sliced red onion
1/2 cucumber, peeled, quartered, sliced
1 small can black olive slices
1/2 to 1 cup crumbled feta cheese
2 to 3 diced tomatoes
Greek salad dressing (see recipe)
Directions:
Wash & cut up all the vegetables. Mix together in a bowl with salt & pepper to taste. Add a Greek salad dressing and serve. (Great with cheddar cheese bread, hot from the oven!)
We find that this salad is hearty enough to serve as a stand alone meal, especially with bread. But you could serve it with a light soup too, if you wanted.
