This vegetarian version of the famous Cobb salad is packed full of vegetables, nuts, and cheese, so that it is practically a meal in itself!

I think this would make a great lunch meal on a day when you'll be attending a Christmas dinner party (be good now, stuff yourself later!) or when you just want a break from heavy, sweet, holiday food.

Holiday Cobb Salad

Ingredients:

1 cup walnut pieces
1 baking potato, peeled & cut into 3/4-inch pieces
1 head romaine lettuce
2 bunches watercress
1 cup drained cocktail onions
1 avocado, diced
1 pear, peeled, cored, and sliced
1 red pepper, chopped

Salad Dressing:
1/2 lb blue cheese, crumbled
1/4 cup wine vinegar
3/4 tsp salt
1/4 tsp fresh-ground black pepper
1/2 cup olive oil

Directions:

In a small frying pan, toast the walnuts over moderately low heat about 5 minutes, stirring frequently, until they are golden brown. Or toast them in a 350 degrees F oven for 5 to 10 minutes.

Boil the potato in a medium pot of salted water until tender, about 10 minutes. Drain and set aside.

Meanwhile, in a large bowl, combine one third of the blue cheese with the vinegar, salt, and pepper. Mix thoroughly and then gradually whisk in the oil. Reserve 2 tablespoons of the dressing.

Cut the romaine crosswise into 1/2-inch strips (about 3 quarts). Add the romaine to the rest of the dressing and toss. Transfer to a platter or salad bowl. Toss the watercress with the reserved dressing. Arrange the remaining blue cheese, the watercress, walnuts, potato, onions, avocado, peppers and pear slices on top of the lettuce and serve with crusty rolls or Italian bread.

This recipe can be thrown together easily in less than an hour, even with the prep time for the veggies. With the seasonal red and green colors, it's quite festive, and would also do well on a holiday buffet.

Variations

  • Add your favorite meat, 1/4-inch strips
  • Substitute sweet potato for the baking potato to be more healthy and colorful
  • Use pecans or almonds instead of walnuts, if you prefer
  • Swap out the pear in lieu of an apple
  • Use feta cheese instead of blue cheese
  • Use different or additional vegetables
