One Friday night after grocery shopping, we were brainstorming quick meal ideas and since we had some leftover red potatoes in the fridge that needed using up, my hubby came up with the idea of making a scrambled egg hash with them and some other veggies. His specialty is breakfast dishes, so I told him to go ahead and go for it. I didn't mind getting the night off! Smile

I call it "Husband Hash" because it's a mishmash of ingredients thrown together by my husband!

Husband Hash

Ingredients:

2 or 3 cooked red potatoes, chopped
1/4 green pepper, chopped
1/4 small red onion, chopped
Handful of mushrooms, chopped
2 or 3 fresh basil leaves, sliced

3 links of chicken apple sausage, chopped
8 eggs
Dash of milk
Salt/pepper to taste
Butter & olive oil

Directions:

First, using a large fry pan, saute the veggies and sausage in a little butter and olive oil. While that is cooking, whisk your eggs with milk and seasonings until yolks and whites are well combined. When the veggies are tender, pour in the eggs and stir to combine. Turn the heat down slightly and cook and stir until eggs are set. Sprinkle with fresh basil before serving.

Although this dish didn't turn out to be real pretty, it was tasty. Thanks, Jim!


Variations

  • Add broccoli, zucchini or cauliflower to your list of veggies
  • Add in a little hot sauce for more heat
  • Substitute crumbled pork sausage, bacon or ham for the chicken apple sausage
  • Or... leave out the meat altogether for a vegetarian option
  • Instead of stirring the eggs, let them set into a frittata
  • Use sweet potatoes instead of the red variety
