Island Chicken Recipe

Quick Chicken Dinner with Rice & Black Beans

This Island Chicken recipe is a quick chicken dinner recipe in my ongoing series of easy chicken recipes.

Recently, I went into my kitchen to make dinner, with absolutely nothing in mind. What to make? What to make? OK... I knew I wanted to use some frozen chicken breasts and it was a hot summer day, so island flavors came to mind. I also had some great red, yellow and orange bell peppers I'd been able to buy on sale the previous week. As I was mulling things over, I came up with this recipe incorporating island flavors into chicken breasts, rice and black beans. It turned out to be a real winner with the family! Hope you enjoy it...

Island Chicken with Rice & Black Beans

Ingredients:

3 medium-sized chicken breasts
1/2 each of red, yellow, orange, green bell peppers, chopped
1/4 yellow onion, chopped
2 cloves garlic, chopped
Handful mushrooms, chopped
Salt/pepper to taste
1 tsp. or so of cumin

1 cup rice, cooked
1/4 c. pineapple tidbits
Olive oil
Cumin
1/8 cup fresh cilantro, chopped
Dash white wine
1 can black beans, drained & rinsed
Handful of slivered almonds, if desired

Directions:

Heat olive oil in pan and then add in veggies. Saute until crisp tender and then caramelize with a little white wine, and season with salt, pepper and cumin. In a separate pan, brown and cook the chicken breasts. When browned, add 1/2 cup chicken broth or water to the pan and cover, to keep chicken moist as it cooks.

Meanwhile, once your rice is cooked, add 3/4 of the pepper/onion mixture to it, along with the pineapple and black beans and 3/4 of the cilantro. Mix well.

When the chicken is done cooking, you're ready to plate. Top each chicken breast with the pepper mixture and a little juice from the pans. Top the rice/beans with a few slivered almonds, for crunch.

I also served this island chicken recipe with pan broiled zucchini and summer squash chunks (which also had some slivered onions and garlic cooked in with them) that were seasoned with cumin and cilantro, to tie everything together. The flavors in this meal were really delicious. We all cleaned our plates, in record time, with no leftovers!


 

Variations

  • Substitute turkey breast for the chicken, or pork chops
  • Add shredded coconut to the rice, or coconut milk
  • Use pineapple in with the peppers on the chicken
  • If you don't like rice, make orzo or just serve with potatoes
  • Chop the chicken up and mix into rice for a stir fry type meal
