Best Kielbasa Recipes for Quick and Easy Dinners

I concocted this Kielbasa Sweet Potato Hash recipe one night when I couldn't find any new kielbasa recipes I wanted to make. Talk about quick and easy dinners!

I love the taste of kielbasa sausage and since it's already cooked, it is so easy to incorporate into a fast meal you can have on the table in minutes. Growing up, my mom used to make a dish called spam and potatoes when we would go camping. This is kind of a take off on that favorite childhood memory.

Kielbasa Sweet Potato Hash

Ingredients:

1 package of kielbasa
1 large sweet potato, peeled & cubed
1 green pepper, seeded & chopped
1 small onion, chopped

2 T. olive oil
1 tsp cumin
1 tsp coriander
Salt/pepper to taste

Directions:

Heat the olive oil in a large frying pan and pan broil the kielbasa and all of the vegetables until nicely softened, browned and caramelized. Season while cooking to taste.

I served this easy meal with some roasted broccoli. Just toss the raw broccoli with a little olive oil, garlic and salt/pepper. Roast at 375 degrees for about 10 minutes (but watch carefully to make sure it doesn't get too browned and crispy). Toss with a little lemon juice and adjust seasonings if necessary. Yumm!


Variations

  • Use white potatoes, rather than sweet
  • Add other veggies to the skillet, such as red peppers, carrots or mushrooms
  • Use Cajun or southwestern seasonings instead of the cumin and coriander
  • Substitute a different type of sausage
