This lemon pepper chicken recipe may be my first thrown together meal ever... one of the easiest lemon chicken recipes around.

I developed this at least 15 years ago as an easy after work dinner that I knew my picky children would like. I may have been inspired by some original recipe; I'm not sure. I know my ex-husband competed once in a grilling contest and marinated chicken wings in a lemon pepper sauce, which we all loved, so maybe that was it.
Regardless, our new lemon pepper chicken recipe immediately became a huge hit. In later years, my girls both learned to make it too and now both make it regularly for themselves as adults. This is truly a family favorite... and it is unbelievably easy and fast.
Ingredients:
Chicken breasts
Liberal amount of lemon juice
Coarse ground black pepper
Olive oil
Salt to taste
1 T. unsalted butter
Directions:
Heat the olive oil & butter in a large frying pan. When hot, add the chicken breasts and begin browning them, turning them frequently. After the first turn sprinkle a bit of pepper on the cooked side and douse liberally with lemon juice. Do it again when you turn them back the other way.
Continue cooking until the chicken is done.
We always serve this lemon chicken with mashed potatoes and corn, but you can certainly feel free to add whatever side dishes appeal to you the most.
