One night when I was getting ready to make dinner, I was in the mood for rice and some kind of Italian-seasoned dish. I had some ground turkey in the freezer and needed to use up some mozzarella cheese and ricotta cheese that I'd bought to make lasagna, but somehow never got around to. So, I started pulling stuff out of the cupboards and fridge, and Lovely Lasagna Rice Casserole was born!
Ingredients:
1 lb ground turkey
1.25 cups rice
1 c. beef broth
1 can chopped tomatoes with Italian seasonings
1 to 2 T olive oil
1/4 cup chopped onion
2 cloves of minced garlic
1/2 cup sliced mushrooms or can of pieces
1 16-oz container ricotta
8 oz bag shredded mozzarella
Italian seasonings, salt & pepper to taste
Directions:
First, brown the ground turkey, onions, mushrooms and garlic in olive oil, adding seasonings to taste as meat is cooking. When done, drain off fat. Meanwhile cook the rice, adding some beef bouillon to the water to flaor the rice. When rice and meat are done cooking, mix them in a 2 or 3-quart casserole with the tomatoes and ricotta. Top with the shredded mozzarella and bake at 350 degrees for 20 to 30 minutes, until cheese is browned and bubbly.
This recipe is super easy to throw together. While the casserole is finishing in the oven, slice open some Italian or French bread, butter it and sprinkle with garlic powder and pop into the oven to warm up. Yumm!
