Low Fat Lentil Lasagna

I love this recipe, it was given to me by a friend on a diet! Not only is it cheap, but it's low fat and amazingly tasty too! Also no messy cheese sauce to make...


Lentil Lasagna

Ingredients:

6oz split lentils
1 onion
1 pepper
1 tin chopped tomatoes
2 tsp mixed herbs
1/2 pint veg stock
Black pepper
Lasagna sheets

For the sauce:
2 eggs
8oz fat free natural yogurt
2oz cheddar
Pinch nutmeg

Directions:

Preheat oven to 200°C (~400°F) or gas mark 6, then:

  1. Cook onions until soft.
  2. Add pepper, lentils, tomatoes, stock, herbs and pepper.
  3. Bring to boil, cover and simmer for 15-20 minutes.
  4. Place 1/2 lentil mixture into 10" x 8" oven proof dish.
  5. Cover with lasagna sheets and repeat.
  6. Whisk together eggs, yogurt and nutmeg, stir in half the cheese and pour over lasagna.
  7. Sprinkle on remaining cheese and bake in preheated oven for 35 minutes or until golden brown.

Thanks for the contribution to our vegetarian page, Sophie. I am a rather recent convert to lentils and while not a dedicated vegetarian, I do enjoy eating vegetarian meals some of the time.

I'll put this on a future menu and be sure to give it a try!
