This Mediterranean Shrimp Pasta recipe is a quick, easy and healthy meal, one of my delicious thrown together shrimp recipes.

My family and I love Mediterranean flavors and ingredients, so coming up with a recipe using beautiful juicy prawns (large shrimp) and some other ingredients I had on hand wasn't hard to do at all. A few rounds through my fridge and cupboards and voila! The latest of my thrown together shrimp recipes was born! Hope you enjoy it.
Ingredients:
1 pound large shrimp or prawns
1/2 onion, chopped
1 clove garlic, minced
1 T. olive oil
1 zucchini, halved & sliced
1 can diced tomatoes
1 small can sliced black olives
Italian seasonings, to taste
1/4 cup Parmesan cheese
2 T. white wine vinegar
1 cup fresh baby spinach
Whole wheat penne pasta
Feta cheese
Handful of pine nuts
Directions:
First, get your pasta going. Heat olive oil in a large fry pan. Add garlic and onion and cook until softened. Add the zucchini and continue cooking for about 3 to 5 minutes. Add the vinegar into the pan to deglaze it. When that has cooked down, add the tomatoes, with about 1/4 to 1/2 a can of water.
Stir in the Italian seasonings (or just basil and oregano), along with salt and pepper as desired. Bring to a boil and add the shrimp. Cook just until pink, then add the spinach and olives. Cover and cook for a minute or two until the spinach wilts. Stir in the Parmesan cheese and turn off the heat.
Put about 1/2 cup of pasta on a plate and top with the shrimp mixture. Sprinkle some feta cheese and pine nuts on top. Garnish with fresh or dried basil, if desired. Yumm!
This was a bit hit at my house. Unfortunately, I did overcook my shrimp a bit, but lessons learned... even the master chefs on TV screw up shrimp and seafood sometimes! Takes a bit of a delicate touch.
