This Mediterranean Turkey Skillet recipe gives a little different twist to that leftover turkey you've been trying to use up after the holidays. It's not your average leftover turkey recipe!

If you like Mediterranean flavors like I do, I think you'll really enjoy this easy way to use up your Thanksgiving leftovers. I don't about you, but I really enjoy when my turkey leftovers recipes don't taste anything like Thanksgiving dinner. I love variety, and this is one way to get it!
Ingredients:
2 T. olive oil
2 cloves garlic, minced
1 T. lemon juice
1/4 tsp. salt
1/2 tsp. dried oregano
1.5 cups cooked turkey, cut in strips
4 cups fresh spinach
8 oz. spiral pasta, cooked & drained
2 cups grape tomatoes
2 oz. feta cheese, crumbled
1 small can sliced black olives
Directions:
Combine 1 T. of the olive oil, the garlic, lemon juice, salt and oregano in a small bowl and set aside. Heat the rest of the oil in a skillet or wok and cook the turkey strips until golden brown. Season to taste with salt and pepper. Add the spinach to the pan, cover and steam until spinach is wilted. Combine the rest of the ingredients, including the dressing you created in the small bowl and toss gently to mix evenly.
This recipe would be great served with crusty French or Italian bread or dinner rolls. Or serve it with pita wedges for a true Mediterranean flair!
