I first had this recipe at my daughter's house. It's one of her and her sister's favorite thrown together meals. This is my version, which is a fairly faithful recreation (I think). smiley

Chicken Tostadas Recipe

Ingredients:

Tostadas (flat corn tacos)
Chicken breasts
Taco seasoning
Salsa
Cilantro, chopped

Shredded lettuce
Chopped tomatoes
Shredded cheese
Sour cream

Directions:

Wrap the tostadas in foil and heat in oven while cooking the chicken. Pan broil the chicken breasts, seasoned lightly with taco seasoning, until browned and cooked through. Chop or shred the chicken. Meanwhile, prepare all of the fixings. When everything is ready, assemble the tostadas as desired, sprinkling with cilantro. Enjoy!

Chicken tostadas are a fast, easy chicken meal to make. In fact, my daughters took the frozen chicken breast right out of the freezer and broiled it until it thawed and then cooked through. Surprisingly, it really didn't take all that long. Warning: This meal is a bit messy to eat!


Variations

  • Use ground beef or turkey, or shredded pork or even fish in place of the chicken
  • Substitute chili powder, cumin and coriander for the taco seasoning, to taste
  • Omit the cilantro and/or the sour cream
  • Add other chopped veggies, such as onion, green pepper, jalapenos, or zucchini
  • Add canned corn or black beans or refried beans (or a mixture)
