Editor's Note: I'm a fish lover and I enjoy learning of new ways to cook it. I mostly broil, pan broil or grill. So I was excited to see this recipe come in from Holly. And super anxious to try out this quick, healthy meal as well!
Ingredients:
4 pieces fish fillets (in serving size pieces)
1 cup julienne-cut vegetables: carrots, zucchini, green onions, celery, etc. (your choice)
4 Tbsp. white wine
4 Tbsp. olive oil
Salt and pepper
Directions:
Heat your oven to 350. Cut or tear one 4 pieces of parchment paper or aluminum foil about 15 inches square. Lay one piece of fish on each square of paper or foil and top each with 1/4 cup vegetables.
Sprinkle 1 Tbsp. each wine and olive oil over each packet of fish and vegetables; salt and pepper to taste.
Bring the edges of the paper together to form a pyramid over the vegetables and fish; fold it together to form a seal to the juices in.
Set each of these on a cookie sheet and bake for 20 - 30 minutes, depending on the thickness of the fish.
Serve with rice or potatoes.
