This pasta recipe is my husband's specialty, but he let me put it in here! 
Primavera means "with vegetables" (I think). Or at least that's what pasta primavera is... pasta with lots of vegetables. So, this is an easy, hearty pasta recipe that anyone can make.
It does require some prep time with the veggies, but if you cut them up ahead of time and freeze them, it shortens your prep on the day of cooking considerably. I didn't put amounts for the veggies, because it's really up to you, depending on what you like and what you have on hand.
Ingredients:
Rotini
Green/red pepper
Red onion
Mushrooms
Olive oil
Ground beef
Garlic cloves
Tomato
Spaghetti sauce
Italian seasonings
Parmesan cheese
Directions:
Chop all the vegetables – I like them to be in small bite-sized pieces, large enough to identify once cooked, but not so large, you need a knife to eat them. Meanwhile, start browning the beef in a little olive oil. As it browns, season with Italian seasonings to taste. Also, start heating the jar/can of spaghetti sauce (we use Hunts – it's cheap and tastes just as good once you doctor it up with a few of your favorite seasonings!).
Once the sauce is bubbling, add the veggies and then the ground meat once its browned. Adjust the seasonings as needed and allow to simmer covered for at least 30 minutes.
When the sauce is nearly done, cook the rotini pasta. When all is done, serve with Parmesan cheese. Yumm!
