Pepper steak is a tasty way to cook cube steak. It's also quite traditional and can serve both as a hearty family meal or even a meal for guests.

When I think of this beef recipe, it seems a bit old-fashioned to me, but on researching interest in it on the Web, I found that thousands of people every month search for a pepper steak recipe, so I thought it'd be worth including here.

Pepper Steak

Ingredients:

Cube steaks
Olive oil
Green pepper, sliced
Tomatoes, chopped
1/2 cup red wine

Onion, chopped
Zucchini, sliced & quartered
Salt/black pepper to taste
1 cup beef broth

Directions:

Brown the cube steaks in olive oil in a frying pan over medium high heat. Season the steak with salt and plenty of black pepper. Remove steaks to a plate & cover with foil to keep warm. Add the vegetables to the pan and cook until softened. Put steaks back in pan, spooning veggies on top. Add 1/2 cup red wine to pan to cook down for about 5 minutes. Next, add 1 cup beef broth, turn heat down to a simmer & cover. Cook for about 30 minutes to tenderize steak.

This recipe is great with mashed potatoes. You can spoon the veggies and juice over them. Yumm!

Variations

  • Substitute a different cut of beef
  • Instead of salt & pepper, season the beef with Montreal steak seasoning
  • Add red bell peppers to the mix and/or delete the zucchini
  • Use canned tomatoes instead of fresh ones
