We love our pork chops in our house. I buy a package of pork chops or a pork loin roast every time I go grocery shopping. And the mushroom pork chops recipe is probably our favorite and the most often made... but last night I came up with a new idea, using orange peel & juice and my fresh ginger root. It turned out pretty tasty!
Ingredients:
3 to 4 center cut pork chops
1 small onion, quartered & sliced
2 cloves garlic, minced
Handful of mushrooms, sliced
1 carrot, peeled and chopped
1 rib celery, chopped
1/2 cup orange juice
Soy sauce to taste
1/4 cup white wine
1/2 cup vegetable or chicken broth
Salt/pepper to taste
1 tsp grated fresh ginger
1 tsp dried orange peel
Directions:
First, season the pork chops with some salt and pepper and them brown them in a little olive oil in a large frying pan over medium-high heat. Remove when both sides are browned. Add the onions, garlic, mushrooms, celery and carrot and cook until veggies are tender and lightly caramelized, about 5 to 10 minutes.
Add the pork back into the pan and then add the wine to the pan, stirring to loosen the browned bits. Let that reduce, about 3 to 5 minutes. Then add the broth, orange juice, ginger, orange peel and a couple dashes of soy sauce. When it begins to boil, turn the heat down to a low simmer and cover the pan. Cook for about 10 to 15 minutes more to tenderize the pork and blend the flavors. (You may need to add a bit more broth if it reduces too much.)
I adapted the flavor profile in this dish from a stir-fry recipe I found in a Taste of Home cookbook. We had this with steamed asparagus, seasoned in a similar way, and mashed potatoes. Delish!
