Mmm... pork is one of my favorite meats. Flavorful and delicious, not to mention fairly low fat, as long as you cut off the fatty edges, pork is also quite versatile. Pork chop recipes are probably my top pork recipes choice.
I always have pork chops in the freezer. They thaw fairly quickly and whipping up a thrown together meal with pork chops as a base is generally super easy. But pork roasts, pork loins and other cuts of pork can work too and are delicious, especially if you have a bit more time at your disposal.
At the grocery store I shop at frequently, they sell large packages of around 8 or 10 boneless pork cuts. They're not chops per se, but the meat is fairly tender and definitely tastes good. They're priced really reasonably, so I buy up a package of that every couple months and get at least 3 or 4 meals out of one package.
