Potato Cheese Soup

Here is my recipe for Potato Cheese soup. It's fast, easy & delicious! Great for a cold winter day. There is nothing like a pot of hearty soup to warm the bones...

Ingredients:

  • 5 med/lg potatoes
  • 1 onion
  • 1 clove garlic
  • 1 cube Knorr Chicken Bouillon
  • 2 stalks celery (optional)
  • 1/2 cup half and half OR milk
  • 1/2 - 1 lb shredded sharp cheddar cheese

Directions
I made this up one night when there seemed to be no food in the house. It turned out to be a family favorite, especially when served with garlic bread.

Put about 8 cups water on to boil while you cut potatoes into bite size pieces and chop the onion and garlic. (and celery if you're adding that)

Add bouillon, potatoes, onion and garlic to boiling water. Cook over medium heat about 20 minutes until potatoes are done to your liking. Take off heat, add cheese and milk. (You don't want to boil the milk because it will curdle) That's it!

This sounds good and heart, Andrea. I'm quite sure I would like it, though it's probably a bit fattening. :) Still, it definitely sounds worth trying and I think I will do just that soon.
