Lots of vegetarian recipes call for tofu, because it is a great source of protein for non-meat-eaters. Tofu is easy to cook with and will pick up the flavors of what it is cooked in, so it makes a great base for almost any vegetarian recipe.
Check out Angel's great recipe below:
Ingredients:
Extra firm tofu*
Olive oil
Soyaki sauce**
General Tso's spicy sauce
Organic Rice (I use the precooked rice from Trader Joe's; only takes 3 minutes to cook in the microwave!)
Directions:
Cut tofu into 1/2 inch cubes; use about 12 cubes per person. Preheat olive oil and soyaki sauce in skillet or wok and add tofu cubes. Turn cubes frequently to coat on all side with oil/soyaki sauce. Cook for 3 or 4 minutes, until heated through.
While tofu is cooking, put organic rice in microwave oven and cook as directed. (I buy the precooked organic rice found in the freezer section at Trader Joe's, only takes 3 minutes in the microwave!)
