Spinach and Feta Crustless Quiche

Here is a quick egg recipe to whip up for breakfast, lunch, or dinner. I even make it to take when visiting friends for brunch. Goes great with a nice side salad, too.


Spinach & Feta Crustless Quiche

Ingredients:

1 onion chopped
3 Tablespoons butter
1 dozen eggs
1 cup heavy cream
1/2 cup crumbled feta cheese
1 package of frozen spinach (thawed and drained)
Salt and pepper to taste

Directions:

1. Preheat oven to 375 degrees.
2. Melt the butter in a skillet and lightly saute the onions until they are clear.
3. Pour the butter and onions into the bottom of glass baking dish.
4. In a large bowl whisk together the eggs and cream.
5. Stir in the feta, spinach, salt, and pepper.
6. Pour over the onion and butter mixture in the baking dish.
7. Bake in preheated oven for approximately 45-60 minutes until set in center. (Time will depend on the size of your baking dish and thickness of quiche.)

Thanks for this egg recipe, Angie. I'm sure it'll be the answer to "egg recipes for dinner" that many of my site visitors are looking for!

And it sounds so much easier and faster than traditional quiche. Can't wait to give it a try next time we're in the mood for eggs.
