Spinach Egg Scramble Recipe

Editor's Note: I'm not a big fan of cooked spinach, though I do like it raw and fresh in salads or slightly wilted in things like risotto. I'm not sure about this recipe, mixing it in with eggs. But hey... it might be great!




Spinach Egg Scramble

Ingredients:

2 cans spinach, drained until dry
6 eggs, beaten with some milk

1 small onion, chopped
Garlic salt to taste

Directions:

In frying pan, saute onion in butter until tender. Add spinach, breaking it up and cooking into the onions. When hot, add the egg mixture and scramble into spinach. Cook until eggs are set. Add garlic salt to taste and serve.



Great side dish for dinner!

Thanks for contributing this recipe, Susan. It sounds good and like a great way to get your green vegetables in! I'm kind of a newcomer to cooked spinach, but it definitely sounds worth trying.
