Swedish meatballs are one of those recipes I grew up on and have continued to make over the decades. I've ordered them out in restaurants and even bought frozen meals of them.
So, the other night I was in the mood for this easy ground beef meal, but I didn't feel like going out in the garage to look for my recipe box, which I haven't yet found a place for since I moved a year ago (sigh). So I decided to just wing it. That's why I named this recipe, "Swedish Meatballs Redux," because it's not necessarily the original recipe, but close...
Ingredients:
Frozen meatballs
Wondra flour
Milk
Unsalted butter
Beef bouillon or broth
Rice, 1 to 2 cups cooked
Allspice
Nutmeg
Parsley, salt, pepper to taste
Directions:
Get the rice cooking, following package directions; I used a wild & white rice mixture, but any rice will do. Meanwhile, make a white sauce, following the directions on the Wondra canister to make the amount you want. Once it's boiling, throw in a couple of bouillon cubes to add beef flavor, along with the seasonings you want. Next, add the frozen meatballs (enough for a serving for each person eating). Simmer while the rice cooks. When the rice is done, mix it with the meatball gravy mixture and garnish with fresh or dried Italian parsley.
In case you don't know, Wondra flour is a finely ground, sifted flour that makes gravies and sauces without lumps. It's truly wonderful! This is a hearty, heart-warming meal. Again, it may not be authentically Swedish, but it IS good...
