Jane's Turkey Layered Casserole

Looking for a way to use up those holiday turkey leftovers? I know that despite how much we love our turkey sandwiches, sooner or later we get sick of them and want something totally different. What to do? What to do?

Jane has given us the answer with this wonderful casserole recipe!

Ingredients:

  • Leftover mashed potatoes
  • Leftover turnip
  • Leftover gravy
  • Leftover turkey
  • 2 cups Bisquick
Directions:
This is a wonderfully easy and fast recipe to make out of your Christmas leftovers. I usually make this on Boxing Day, and it's like Christmas dinner all over again, with a twist.

Cover the bottom of your 13 x 9 baking dish with some smears of gravy. Add slices of white and dark turkey to cover.

Next, layer turnip or squash; whatever you have. Add a bit more gravy and turkey slices. Layer another type of vegetable, like peas. Or layer
with turnip again.

Finish up the layers with mashed potatoes. Sprinkle some salt and pepper, and drizzle some more gravy if you want to. Mix up two cups Bisquick as per instructions on the box.

Spread over top of mashed potatoes like icing on a cake, but not too thick. Place on a cookie sheet in case of drips, and bake at 350 degrees F., until the Bisquick mixture turns golden in color. The gravy will probably be bubbling at this point.

Cranberry sauce on the side is nice with this.

Saran wrap and keep refrigerated. Reheat in oven with foil over top, or zap a piece in the microwave.

Jane... This sounds (and looks) wonderful. I can't wait to try it next time I cook a turkey. It's almost worth making a turkey just so I can use the leftovers in this way. :) Thanks so much for contributing this holiday turkey recipe!
