One night, I wanted to make a fish/seafood dinner, but as my daughter had recently joined our household, I didn't have enough of either tilapia or shrimp to feed us all. So, I decided to combine the two into one dish. The result was this tilapia recipe, based on my usual shrimp scampi recipe.

Tilapia Shrimp Scampi Recipe

Ingredients:

4 tilapia filets
1/2 pound of raw shrimp
Old Bay seasoning
Lemon juice

1 to 2 T. Olive oil
2 T. butter
Salt/pepper
Parsley

Directions:

Cut the tilapia into bite-sized pieces. Peel and de-vein the shrimp, if necessary. Sprinkle the fish & shrimp with Old Bay seasoning. Heat the olive oil and butter in a large frying pan.

Add the fish and cook for about 1 to 2 minutes, then add in the shrimp. Cook & stir until shrimp and fish are both done through. Season with lemon, salt & pepper to taste. Stir to combine, heat another minute or two, then turn off heat and sprinkle with parsley.

I couldn't believe how much my family liked this Tilapia Shrimp Scampi Recipe. It was tasty. We had it with white rice and a steamed broccoli and zucchini mixture.

Variations

  • Add minced garlic in the pan with the fish and shrimp
  • Saute in wine, adding it when you add the lemon juice
  • Substitute lime juice for the lemon juice
