Webmaster's version of Liz's Tuna Avocado Rice Salad Avocado adds moisture and good fats! Tomatoes Lettuce

As a busy person this tuna salad recipe is a life saver and so easy, and great to make when avocados are in season. It can work using either tuna or salmon. Avocado is a must as it makes the dish. This recipe serves 2.


Tuna Avocado Rice Salad

Ingredients:

1 cup brown rice
1.5 cups lettuce, ripped up
1 tomato, chopped
1/2 cucumber, chopped
1 avocado, peeled, pitted & chopped
1 can tuna, drained & flaked

Directions:

1. Cook the brown rice in the microwave (easily done while you are doing the other stuff).

2. In a bowl for each person, put lettuce, tomato, cucumber (and anything else you might have) and 1/2 ripe avocado per person.

3. Allow rice to cool slightly and divide between bowls.
Divide the flaked tuna between the two bowls.

4. Lightly toss through the rice mix and serve.



I like the tuna or salmon with flavors added, especially semi-dried tomatoes or chili. Use different types to vary the taste of this easy salad each time you make it.

OK... I finally had a chance (and the ingredients on hand) to try this today. In full disclosure, here are a few changes I made to the recipe:
  • Used short-grain brown rice, instead of white
  • Added some canned pineapple tidbits
  • Used a dash of Cajun seasonings, in lieu of flavored tuna
  • Used plain tuna, not flavored
  • Added chopped pecans
  • Added some citrus vinaigrette


OK, so how did I like it? It was good! The recipe may have been fine without my additions, but I like a lot of flavor, different textures and it seemed a bit dry, even with a ripe avocado. Brown rice is also healthier and I just like its chewiness better.

I thought the addition of rice into a green salad seemed a bit odd, but it worked. Would I make this again? Probably... it was definitely tasty!

OK, Liz, I think I get it now. Well, as I said, I love all the ingredients, so I'll definitely be testing this one... just as soon as I can get myself to the grocery store and buy an avocado and some tomatoes! Thanks again...

Use Nice Moist Avocadoes! NEW

Hi Kathi

There is always some liquid that comes with the tuna that mixes in, but it is mainly the ripe avocado that makes it moist. A good avocado should be moist when ripe, and often it ends up semi-mashed by the mixing through.

Avocado has a lovely texture too. If you think about how nice Guacamole is- which is made by mashing avocado with other ingredients, you can understand how this might work. And there is liquid in the tomatoes too if you use ripe juicy ones.

We eat it often while avocados are in season as its just so easy for busy people like we are!

This is an interesting sounding recipe, Liz. I'm intrigued by the kind of odd pairing of rice with lettuce. I love all the ingredients, though, so I'm looking forward to trying this one.

I have a question though... you don't mention any type of dressing? Isn't it kind of dry? Is it really just the veggies, rice and tuna?
