With our Turkey Nacho Casserole Recipe, you can use up that leftover turkey. It's a turkey recipe with a Tex Mex flair!

Holiday turkey dinners are wonderful, aren't they? And so are those delicious leftovers! But, sooner or later, you may be looking for a way to use up those last bits of turkey that don't involve gravy, soup or cranberry sauce. My girls live in Texas and they eat Tex Mex food about 75% of the time, so I thought up this recipe to appeal to their palates...
Ingredients:
2 to 3 cups cooked turkey, cubed or shredded
1 to 2 T. olive oil
1/2 small onion, chopped
1 green pepper, seeded & chopped
1 cup of your favorite salsa
1 T. lime juice
1 can black beans
2 cloves garlic, minced
1 tsp. chili powder
1 tsp. cilantro
3 cups crushed corn/nacho chips
1/2 bag shredded taco cheese
Directions:
Saute the onion, garlic and green pepper in the olive oil until softened, then add in the turkey. Season with salt, pepper, chili powder or taco seasoning. Mix the salsa and black beans together, and add in the lime juice and cilantro. In a casserole, layer the bottom with about 2/3 of the crushed corn chips. Top those with the meat mixture and then with the salsa/black bean mixture. Top with the rest of the crushed chips and sprinkle cheese over the top. Bake at 350 degrees for about 30 to 45 minutes until casserole is bubbly and the cheese is melted. (You may need to cover with foil, if the top starts to get too brown, so keep an eye on it.
This is a really different way to use your leftover turkey. But if you like Mexican food, I think you'll enjoy it! And it would be super easy to change a few things and make it your own unique thrown together turkey nacho casserole recipe!
