If you like eggs for dinner, then you might enjoy my frittata recipe. It's super adaptable, with whatever ingredients you happen to have on hand. And it cooks up quick... even I can make this recipe in less than 30 minutes most nights, even with prep time. ![]()
Ingredients:
2 to 3 eggs per person
1 to 2 cups chopped vegetables
Dash of skim milk
Seasonings as desired
Salt/pepper to taste
1/2 cup crumbled or shredded cheese, such as goat or Monterey Jack
Directions:
Mix the eggs, milk, any seasonings and salt/pepper in a large bowl until blended. Chop whatever vegetables you have on hand. I always use some onion, then may add zucchini, broccoli, carrots, mushrooms, etc., depending on what I have on hand. Asparagus is good too, as are small amounts of white or sweet potatoes.
In a large frying pan over medium-high heat, melt a little butter or spray your pan with a nonstick spray or olive oil. Put in the veggies and saute them until mostly softened; should only take 5 minutes or less. Then add in the egg mixture.
Turn the heat down a bit to medium. Using a spatula, push the cooked egg around, allowing the uncooked runny portion to fill in the openings. Move the veggies around to keep them even throughout. Keep doing this until there is a fairly solid base to the egg "pancake" (The top may still be fairly runny).
Sprinkle the cheese across the top and put the pan in the oven a few inches under the broiler. Cook it for 3 to 5 minutes until it puffs up a little (and is completely cooked) and browns slightly on top, along with the cheese melting. Take it out and sprinkle some parsley or cilantro across the top, if desired. Use a pizza cutter to slice it into wedges for serving.
This is so easy to make, no matter what you have on hand, as long as that includes eggs and a few vegetables. We find it's enough for us, but you might also like to serve it with some homemade muffins or toast. You can also add in some chopped breakfast sausage, bacon or ham... or just serve the meat on the side. You might also want to serve your eggs with some salsa... It's totally up to you!
