Verduras is a Spanish recipe which is often the first course on the menu in basic Spanish restaurants. I lived in Spain for 8 years and it was one of my favorites. The word Verduras just means vegetables, and is the best and simplest way to cook them.
Boil any vegetables you like - I use green beans, asparagus, broccoli, potatoes, zucchini - together with an onion cut in half in the water. Don't cook them too long or they'll go mushy - half an hour maximum.
When the veggies are cooked, drain them and drizzle on some extra virgin olive oil.
Serve.
I sometimes grate some of my favorite cheese on top to get some protein. Sometimes I'll add a couple of cloves of garlic into the water too. Just cut them in halves.
