It takes a kitchen full of cooks...

Verduras

by Lesley
(Sydney)

Verduras is a Spanish recipe which is often the first course on the menu in basic Spanish restaurants. I lived in Spain for 8 years and it was one of my favorites. The word Verduras just means vegetables, and is the best and simplest way to cook them.

Boil any vegetables you like - I use green beans, asparagus, broccoli, potatoes, zucchini - together with an onion cut in half in the water. Don't cook them too long or they'll go mushy - half an hour maximum.

When the veggies are cooked, drain them and drizzle on some extra virgin olive oil.

Serve.

I sometimes grate some of my favorite cheese on top to get some protein. Sometimes I'll add a couple of cloves of garlic into the water too. Just cut them in halves.

Que aproveche! (Bon apetit)

Side Dish or Dinner? NEW
by: Kathi

Thanks for contributing this recipe, Lesley. I hadn't heard of this dish before, but then I've never been to Spain. :)

Although it sounds great, it doesn't sound like it would be a complete meal, even with the grated cheese. I think I'd want to add some sort of protein, either some pinto beans or lentils or maybe some brown rice?

Also, to retain more vitamins, I might try steaming or roasting the veggies, rather than boiling them. But that's just me!
